Pako Aldapaga runs our indoor grill, where customers can see everything we grill. We enjoy preparing with care and all the know-how of our ancestors, delicacies such as sole, sea bream, turbot … to the best meats such as txuleta, undisputed protagonist of the grill!

A team of great height.
Napoleon Lertxundi bets for this new adventure by a great team, the head of the kitchen Iosu G. Beraza and the head of the grill, Pako Aldapaga. In the dining room, the attention will be in charge of the head waiter Tiago Amores. Undoubtedly, veteranism and know-how that will connect with diners.

Olivi and Saizar, a family history.
The origins of Olivi are related to the history of Saizar, since in the 70’s, when Esteban Lertxundi decided to take advantage of the farmhouse to create a cider house, he built a villa next as a tribute to his wife Olivia Ibarguren. Today, the son of both Napoleon Lertxundi, decides to bet on a steakhouse that settles in this villa.
